Fresh, Grass-Fed Beef Tallow Has Landed! 🐄

We’re so excited to announce the arrival of our very own grass-fed beef tallow! 🐄 If you’re new to tallow, you’re in for a real treat! It’s similar to lard, but it’s rendered from ruminant animals (cattle, in our case) instead of pigs. Their properties and uses differ slightly.

Our tallow is made using nutrient-dense fat straight from the grass-fed cattle on our farm, crafted with love by Chef Joanna — it doesn’t get more local than that! 💚

Tallow is rich in choline and provides a great source of fat-soluble vitamins — perfect for supporting brain, nervous system, and immune system function, among many other benefits. We love using it to sear our meats and roast our veggies, and it also doubles as an incredible skin moisturizer!

Similarly, our lard is a fantastic cooking fat — ideal for sautéing, frying, baking, and even seasoning or maintaining cast iron pans. 🥘

This week’s local, fresh harvest includes:

  • Arugula (Wasabi—peppery hot! And excellent for your favorite sashimi dish!)

As always, our produce is GMO-free and grown without synthetic pesticides, herbicides, or fungicides — and we make sure it stays that way, even for crops that are tricky to grow naturally!

Dairy & Eggs

This week’s options include:

  • Grass-fed, organic, non-homogenized, low heat pasteurized milk (A1/A2 and A2/A2 this week), butter, buttermilk, cheese (cottage cheese, cottage cheese kefir, and GGC sharp cheddar), French dip, kefir (plain), yogurt (plain or vanilla), and whipping cream. 

  • Chicken and Duck eggs this week! Our eggs are hand harvested and cleaned. Our chickens are raised on not simply organic but also a soy free grain mix along with their free range diet. There really is nothing like the consistency and flavor of these delectable treats from heritage breeds . . . we bring out the connoisseurs!

  • Beef Savory Roasts, Steaks & Ribs: Brisket (plenty large enough for smoking), Chuck, Chuck Arm, Round (top, bottom, eye, and full), Flat Iron, Mock Tenderloin, and Rump & Sirloin Tip Roasts and Steaks. 

  • Beef Grill Options: Ground Beef, Ground Chuck, and Ground Round. Beef Patties (3 or 4 pk)! We're also carrying The Brooklyn Hot Dog Company dogs: All Beef or Beef & Pork! Buy two or more packages for a 10% discount (see our boxes on our pre-order form)!

  • Beef Stew & Organ Meat Options: Stew Meat (limited supply), Soup bones and Organ Meats, including cheeks, heart, kidney, liver, and more! 

  • Chicken (frozen): Whole, Cut-ups (breast—boneless / skinless, leg quarters, and drums—a 10% discount if you buy 2 pkgs or more of leg quarters or drums while supplies last!!). We also have Ground Chicken and Sweet Italian Chicken Sausage! And, chicken organ meat (including: backs, necks, feet, liver, and gizzard)!

    • Pork Roasts: Like pulled pork? We have both the Pork Butt and the Picnic Roasts fresh frozen (about 2.5 to >8 lbs each).
